Organic Sundried Tomato Chicken Sausage, Roasted Red Potatoes and Sauté Brussels sprouts!
Brussels sprouts are a wonderful winter veggie easy to include in a balanced meal. Together, these fine foods provide a healthy dose of vitamins, fiber, and protein. Perfect meal for rebuilding muscle, sustaining energy, and of course, so yummy! Ingredients Include: Serving 4 1 package of organic chicken sausage (4 links in a pkg.) 5 cups chopped organic red potatoes (3 large whole sizes) 1 pound organic Brussels sprouts 3 large portabella mushrooms, sliced ½ tsp sea salt ½ tsp fresh ground pepper ¼ tsp garlic powder 1 lemon 3 tbsp extra virgin olive oil 6 cloves of garlic, minced
Directions: Set oven to 425 degrees for potatoes. Cut potatoes into 1 inch triangles. Put the potatoes a in large bowl and toss with a ½ tbsp of olive oil, some of the sea salt, pepper, 3 cloves of garlic and the full amount of garlic powder. After the potatoes are seasoned, spread them on a cooking sheet so that all pieces are touching the pan. Roast potatoes for about 35 min.
While potatoes are roasting…
Brussels sprouts- Rinse and cut Brussels sprouts into quarters. Heat 1 -2 tbsp of olive oil over medium heat- add Brussels sprouts and some of the salt and pepper. Cook for about a minute and then add 3 cloves of minced garlic. Sauté for about 5-7 min. until browned and softened, but not soggy. Squeeze half of the lemon over the Brussels sprouts during the last minute of cooking. Remove from heat.
In a separate pan, heat to medium high heat and add chicken sausage. Cook until internal temperature is at 165 degrees (approximately 7-10 min. cooking time). Take the sausage out of pan and add a small splash of olive oil to pan, tossing in the portabella mushrooms. Cook mushrooms until dark in color. Mushrooms should still be firm when done.
Cut sausage into bite size pieces and place over mushrooms. Add the Brussels sprouts and you’ve got yourself a beautiful meal!
